Crispy Filo King Prawns with Sweet Chilli Dip

Raw king prawns wrapped in a single strip of buttered filo and fried for three minutes until the pastry shatters and the prawn is just cooked. Served with a lifted sweet chilli dip.

For the prawns

  • 7 raw king prawns, shelled and deveined, tails left on
  • 1/4 tsp fine sea salt
  • 1/4 tsp ground white pepper
  • 1/4 tsp garlic granules
  • 2 large sheets filo pastry, thawed if frozen
  • 30 g unsalted butter, melted (or 2 tbsp vegetable oil)
  • About 1 litre sunflower or vegetable oil, for frying
  • Flaky sea salt, to finish

For the dip

  • 4 tbsp sweet chilli sauce
  • Juice of 1/2 lime
  • 1 tbsp fresh coriander, finely chopped (optional)


Instructions

  1. Lay the defrosted prawns on kitchen paper, press another sheet on top and leave for 5 minutes. Pat them again. They should feel tacky, not slippery.
  2. Season the dried prawns all over with the salt, white pepper and garlic granules.
  3. Unroll the filo and cut the stack into strips about 5 cm wide. Cover all the strips with a damp tea towel and work with one at a time.
  4. Brush one filo strip very lightly with melted butter, just a thin sheen.
  5. Lay a prawn diagonally at one end of the strip with the tail poking out past the edge. Fold the corner over the body, then roll the prawn along the strip at a slight angle so the pastry spirals up the body, overlapping each turn by about half. Leave the tail exposed and press the final flap down firmly to seal.
  6. Repeat with the remaining prawns, setting them on a tray. Wrap all of them before you heat the oil.
  7. Stir the sweet chilli sauce, lime juice and coriander together in a small bowl.
  8. Heat the frying oil to 180°C in a deep, heavy pan, filled no more than a third full. To test without a thermometer, drop in a scrap of filo: it should sizzle briskly and turn golden in about 15 seconds.
  9. Holding a prawn by the tail, lower it into the oil away from you, seam-side down. Fry 3 or 4 at a time for 2 to 3 minutes, until the pastry is deep golden and the prawn has curled slightly.
  10. Lift onto a wire rack and season immediately with flaky sea salt. Let the oil come back to temperature before frying the next batch.
  11. Serve straight away, uncovered, with the dip alongside.

Notes

Make ahead: The prawns can be wrapped up to 4 hours ahead and kept on a tray in the fridge, uncovered or only very loosely covered. Wrapped raw prawns also freeze well on a tray, then bagged; fry from frozen at 170°C for 4 to 5 minutes.

The mistake to avoid: Draining these on kitchen paper. Trapped steam softens the base within a minute. Always use a wire rack and never cover them.

Variations: Air-fry at 200°C for 7 to 8 minutes, brushed generously with oil, turning once. Or bake at 210°C on a wire rack over a tray for 12 to 14 minutes. Spring roll pastry cut into 4 cm strips gives a smoother, bubblier crust. A quarter teaspoon of garlic butter or chilli jam smeared on the prawn before wrapping adds a flavour layer.

Equipment: A deep heavy pan or fryer, a cooking thermometer if you have one, a wire rack set over a tray, a pastry brush, a damp tea towel and a slotted spoon.

Deep frying safety: Never fill the pan more than a third full, never leave hot oil unattended, and keep a pan lid within reach. Lower food in away from you.
